Servings: 4 people

Ingredients

  • 400 grams Penne Pasta (14 ounces)
  • 35 grams Scallion (1.25 ounces)
  • 150 grams Tomatoes (1 third of a pound)
  • 2 grams Chives
  • 200 grams Smoked Salmon ( 7 ounces)
  • 40 grams Vodka (1.5 ounces fl)
  • 200 grams Half and Half (7 ounces fl)
  • 40 grams Extra Virgin Olive Oil (1.5 ounces fl)
  • 1 tbsp Salt
  • 1 tbsp Pepper

Instructions

  • First, prepare all of the ingredients! Cut the tomatoes into fourths, mince the shallots and the chives (separately), chop the salmon into strips.
  • Heat up a large frying pan on medium heat and drizzle in a decent amount of olive oil. Once the pan is hot enough, add the shallots and cook for 1-2 minutes.
  • Add in the chopped salmon and let it fry up for a couple minutes. Then, slowly pour in the vodka and let that cook until most of the vodka has cooked off.
  • Now, add the tomatoes and chives in. Let those cook for 1-2 minutes, then add in the half-n-half, salt, and pepper. Turn the heat down to low and let this simmer while you make the penne pasta.
  • Once the penne is ready, drain and add the pasta straight to the frying pan. Turn the heat off and make sure to thoroughly coat the penne in sauce.
  • Serve it up and pair with a crisp white wine for the perfect dinner!
